Salad

After the excesses of the season, I don't feel like cooking. This salad is easy to assemble - chopped carrots, cherry tomatoes, lettuce, cucumbers, boiled eggs, a dressing of olive oil, sea salt and balsamic vinegar, topped with parmesan - lots of it and is my dinner when I am not eating out.

Hi Plumpernickel, Just want to tell you of a delightful simple salad, which Anna Maria my Argentinian housekeeper made and we loved.
It has boiled cubed potatoes, just blanched carrots and green beans, a few chopped tomatoes and some boiled eggs, cut into pieces. This is mixed and very gently tossed with the simplest vinigrette of olive oil and seasoned rice wine vinegar. Rice wine vinegar is extremely light and delicate in flavour. You can use any other kind as a substitute but may not get that ephemeral summer touch. Try it! You will love it, I guarantee it!
